So this week has been British Sandwich week! And who doesn’t love a sandwich?!

Oxford English Dictionary defines a sandwich as “an item of food consisting of two pieces of bread with a filling between them, eaten as a light meal.” Seems like a simple enough concept. So, who came up with this innovative way of serving food? While I’m sure the Earl of Sandwich would like all the credit, the true history of the sandwich goes back much further.

Most of us have heard of the fourth Earl of Sandwich, otherwise known as John Montagu. In the late 1700’s, French writer Pierre-Jean Grosley recounted his observations of English life in a book called Londres (translated to English under the name A Tour to London). In the book, a few lines were written that forever tied this food invention to the Earl of Sandwich:

A minister of state passed four and twenty hours at a public gaming-table, so absorpt in play, that, during the whole time, he had no subsistence but a piece of beef, between two slices of toasted bread, which he eat without ever quitting the game. This new dish grew highly in vogue, during my residence in London; it was called by the name of the minister who invented it.

While it is not clear if this anecdote is completely true, the book gained popularity and the story took hold. Soon the name was official—when you ate two pieces of bread with something in the middle, you were eating a “sandwich.”

Red Nose Day has been going since 1988 and has changed the lives of millions!

Since the last Red Nose Day, Comic Relief has spent £99 million helping over 12 million people – this includes money raised through Red Nose Day, Sport Relief and other fundraising!

Here a just a few examples of what previous donations have achieved!

  • Between 1999 – 2008 the number of children attended school in sub-Saharan Africa increased by 46.5million!
  • The number of new infections of HIV in Africa dropped by 21% between 1997 and 2010!

Sweet Mince Meat Filo Parcel

The countdown to Christmas has well and truly begun. With Christmas Advent Calendars being opened (or have already been eaten), decorations going up and lots of great Christmas party events beginning throughout our hotel! This also includes our profound love of mince pies with a whopping 370 million mince pies being purchased from UK Supermarkets every Christmas!

Interestingly enough we all love our small British fruit based mince pies but not many of us actually know much about them! So what is the history behind our beloved festive treats?

Mince Pies are traceable back to the 11th Century. The early mince pie was known by several names including Mutton pie, Shred pie and Christmas pie! Typically its ingredients were a mixture of minced meat, suet, a range of fruits, and spice such as cinnamon, cloves and nutmeg. Mixing animal products with fruit and spices like cinnamon and nutmeg became popular in the medieval period , when returning Crusaders introduced new flavours to British kitchens, it was also of course a thrifty way of making a little mince go further. It was also a particular favourite for Henry VII. Mince Pies were a statement of class and hierarchy.

The meat used to fill these comforting pies ranged from rabbit to mutton and everything in-between. However, many 16th century recipes for Neat or Beef tongue. By the mid-Victorian period, meat fillings became less common.  The modern mince pie now consists of no meat just raisins, cherries, candied peels, apricots and currents and spices such as nutmeg or cinnamon is added and alcohol with sugar.

It is a tradition to make a wish before eating a mince pie. Mine would be to have another one!

The popularity of mince-pies is astounding and will fill many of our dinner tables, yet even the best machine-made pies cannot compare with a well-filled hand-made one. @SUITES HOTEL we like to spoil our guests. Bollinger is closely associated with Britain, given a Royal warrant by Queen Victoria in 1884. Other ties include James Bond, King James VII and the official champagne of England Ruby. Even whilst Bollinger has developed into an International brand, the UK is still it’s biggest importer. Proud to be an independent business, Bollinger pride themselves on superior high standards and quality.

So what is the history behind Bollinger?

The house was founded in Ay in 1829 by aristocrat Athanse de Villermont with two experts in wine Joseph Bollinger a traveling German and Paul Renaudin. Renaudin soon left the firm, however, Bollinger married ade Villermonth and expanded the business rapidly. Through the phylloxera crisis, the turmoil of the Great War, the difficulties of the recession and the Second World War the business continued to grow. During World War II, widowed Madame Lily Bollinger took charge of the house. Her sheer determination to expand and development the business was shown throughout the Allied Bombardments, sleeping in the cellar, including the American raid of August 10th 1944, which destroyed a third of Ay. Madame Bollinger developed the business buying prime vineyards in Ay, Grauves, Bisseuil and Chamviosy bringing the estate up to 440 acres.

These vineyards were able to give the edge over its competitors, supplying itself with over a third of the company’s needs.  Madam Bollinger was a perfectionist and innovative business woman. Madam Bollinger was the driving force behind the unique original Bollinger R.D Cuvee. In 1865, Bollinger became one of the first merchants to ship a drier style of Champagne to England and in 1870 to the United States. Lilly Bollinger is well respected for successfully expanding the Champagnes house’s share of marketing whilst concentrating on the quality and tradition of the wines. She is well remembered for her statement;

“I only drink Champagne when I’m happy and when I’m sad. Sometimes I drink it when I’m alone. When I have company I consider it obligatory. I trifle with it if I’m not in a hurry and drink it when I am; otherwise I never touch the stuff unless I am thirsty.”

Bollinger was modernised under the direction of Claude d’Hautefeuille, then handed down in 1994 to Bollinger’s Great-Great Grandson Ghislain de Monogolfier. Being a descendant of the founder of Bollinger Champagne, he continues to produce high quality champagnes whilst up keeping the Bollinger independent spirit.

Recently in 2008, for the first time since the creation of Bollinger, Ghislain de Mont Golfier placed the future of his family business to a chairman not related. Jerome Philipon, originally from a champagne background, however also having an extensive and successful career with large industrial groups. With the family maintaining the traditional expertise they are now able to incorporate the best technologies to both further develop the brand, in terms of quality and commercial growth.

So what makes the Bollinger House Estate different?

One thing that sets Bollinger apart from any other Champagne is the House’s 164 hectares planted with 85% of Grand Cru and Premier Cru vines. Bollinger is one of the very few champagne Houses to product a third of its own grapes for their blends. Bollinger only use the highest quality grapes from the first pressing, resulting in an excellent must.

 Another distinctive feature is the vines that are entirely tended by hand and reproduced using a form of layering called provignage, providing the means to preserve this extraordinary heritage.

Bollinger’s constant strive for perfection is also apparent in their wisdom to know when dealing with wines that time is magic. Time essentially magnifies the aromas of each wine, strengthening their character; it is a key factor to Bollinger’s philosophy. Gilles Descotes is the Bollinger’s cellar master who observers the wines from each cru and each plot, chooses only the finest wines to be vinified in old oak casks, a practice which has almost disappeared in the champagne production. The micro-oxygenation process delicately reveals the wines complexity and gives them an astonishing capacity for aging.

After the production of the winemaking, the excellence and devotion to detail certainly does not rest there. Every cork stopper is carried out by hand. Bollinger allows the bottles to rest for three months after disgorging to give the wine the time it desires to stabilise.
Labelled and packaged, they are finally ready to be shipped to clients all around the world.

Ayala Rose
The House of Ayala was one of the elite founding members of the Syndicat des Grandes Marques de Champagne and was purchased by Bollinger in 2005.
This Rosé Champagne has beautiful delicate cherry colour with a copper hue. A fine and delicate mouse with aromas of berries, cherries and spice. It is well balanced with a rich, fresh, long lasting finish. Ayala Rose is made up of a blend of:
51% Chardonnary, 30% Pinot Noir, 10% Pinot Meunier,
9% still red wine from Mareuil-sur-AC

Tiramisu – A Cause for a Celebration.

So here it is! Our first blog and what better way to start it than talking about our ‘SUITES SIGNATURE TIRAMISU’ And why? Because Tiramisu is a dish for celebrations, to bring people together and a representation of all Italian cuisine.

This is a dish that provides pleasure above all else. Tiramisu is an internationally loved dish, the most popular among Italian desserts.

So what is Tiramisu?

Its popularity over the last three decades has resulted in Tiramisu adapting dishes such as cheese cakes, puddings, cakes and ice cream.

However the traditional version is a rich and elegant Italian dessert that is made by combining lady finger biscuits, espresso, mascarpone cheese, whipping cream, icing sugar, and vanilla. Through the grouping of these diverse ingredients, a profound yet sophisticated dish

The name ‘Tiramisu’ translates into ‘Pick-Me-up’. However, the reason why it got this name and the origins of Tiramisu creates some controversy.  Unlike other Italian dishes that have a lengthy culinary history, many claim this dish is relatively new, merely dating back to the 1970s. One account insists it was created in WW1 for the soldiers of war to give them energy to return home safely. Another account suggests it was created in 1971, in a restaurant called Le Beccherie, in Treviso. Besides the lack of knowledge of where this dish orientated from, it has become an internationally loved dish

One of the reasons this dish is so popular is the use of contrasting flavours. The delicate flavour of the mascarpone cheese, whipping cream and vanilla are contrasted with the subtle presence of sharp espresso and sweet cocoa powder. Brought together with the crunchy texture of the lady finger biscuits brings all the flavours and textures together creating a luxurious treat.

This dish takes up to 15 minutes to make and is great for family occasions.
